Blueberry Zuchini Bread

Ingredients

3 eggs, lightly beaten
1 cup vegetable oil
3 teaspoons vanilla extract
2 1/4 cups white sugar
2 cups shredded zucchini
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1 tablespoon ground cinnamon
1 pint fresh blueberries

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease 4 mini-loaf pans.
In a large bowl, beat together the eggs, oil, vanilla, and sugar. Fold in the zucchini. Beat in the flour, salt, baking powder, baking soda, and cinnamon. Gently fold in the blueberries. Transfer to the prepared mini-loaf pans.
Bake 50 minutes in the preheated oven, or until a knife inserted in the center of a loaf comes out clean. Cool 20 minutes in pans, then turn out onto wire racks to cool completely.

Cinnamon Rolls, again

I don't know about you, but I absolutely love breakfast for dinner. It is always so tasty and quick, whether you're whipping up pancakes, dipped bread for your French Toast or making fresh, warm cinnamon rolls with bacon and eggs.

I posted an excellent Cinnamon Roll recipe here, but with dough that rises overnight, you kinda have to plan ahead. I'm not that smart. So I combined a bread dough recipe from my mom and with the filling and glaze and now I have a ready to go cinnamon roll recipe in time for dinner!

*this dough is made up in the bread machine where it kneads and rises for 1 hr & 40 minutes. To speed things up even more, mix and knead the dough in your kitchen aid and rise 45 minutes in a warm oven.

Blue Ribbon Roll Dough
put in pan in this order~

1 1/2 Cups very warm water
1 egg, beaten
1/4 cup veg. oil
4 1/2 cups flour
1/3 cup sugar
1 1/2 tsp salt
1 Tbls yeast

Mix on dough cyle. Punch dough and shape. Makes 2 loaves of white bread or 18 "grandma" rolls in 9x13 pan or 16 cresent rolls. Bake rolls @ 350 degrees for 15 minutes and loaves of bread for 30 minutes. For cinnamon rolls, roll, spread filling and bake at 350 dgrees for 15 minutes.

Officially Fall

Our weather is late by about 3 weeks this year. The cold fall rains have begun, the skies are gray, and all I can think about is baking and cooking! Woo hoo! Let's see what I can get done today. I'm thinking zuchini bread, molases cookies and something with cranberries for dinner.
